Lemon Asparagus

The day before school started, Labor Day, my husband and I wanted to do one last barbecue before we were all back to our "School Routine." We had steak, baked potatoes, cesar salad, texas toast and one of my faovrites, Lemon Asparagus. I absolutely love making asparagus.

One of my earliest memories of eating asparagus was having someone boil it, over cooking it and wanting me to eat this soft chewy vegetable. Ew. I was turned off by it quickly. I didn't try it again until I was able to actually cook it myself. I always either have the hubby grill it on the barbecue or I put it in the oven. In this case, I made it in the oven.

This is a quick and easy recipe that doesn't take long at all and the turnout is absolutely delicious!



Lemon Asparagus

Ingredients
1lb. Asparagus, ends trimmed
1tbsp. Olive Oil
1 Lemon, Zest and juice
Pinch of Sea Salt
Lots of freshly cracked pepper

Directions:
Preheat oven to 400 degrees F.
Toss or mist the asparagus with olive oil and 1 Tbsp. lemon juice until evenly coated.
Add a pinch or two, to your liking, of sea salt, and then add the freshly-cracked black pepper.  Add in the oven and roast for no more than 15 minutes, or until asparagus is tender.  
Remove and garnish with lemon zest.
