Frozen Banana Popsicles

This first week of school has been eventful. My daughter, who's now in grade two, has come home making new friends, starting a girls only club, tons of paperwork to fill out and yesterday she comes home with a part in a play that the kids in grade two are doing for all the Junior and Senior Kindergartens when they return to school next week. She's so excited! I'm excited for her and already have my camera charging so I can film it.

So as we finish up the first week of school I want to share with you all a kid friendly after school snack I made for my kiddos and some of their neighborhood friends who have came over this week to play. Frozen Banana Popsicles! These little treats are seriously delicious and super easy to make. While my daughter was enjoying her first day of school on Tuesday, my five year old son helped me make them. He was so excited to help mommy make an after school snack for his sister!

These were such a huge hit with both kids, their friends and the hubby. So if you're thinking of an easy treat to make the kids this weekend, try them, they're going to love them!


Frozen Banana Popsicles 
Makes 12
Ingredients
4 Medium Bananas
8 oz. Milk Chocolate Chips (For less sugar you can always use Semi Sweet Chips too!)
1 Tbsp. Extra Virgin Olive Oil (Vegetable Oil works well too)
Sprinkles (optional)

Directions:
Peel and cut your bananas in three. Insert popsicle sticks and stick the bananas on a cookie sheet with wax paper lined. 

Then place the sheet with the bananas in your freezer. Once the bananas are frozen (about an hour) take them out of the freezer. 

Now take your chocolate chips and place in a microwave safe cup and add your oil as well. Melt your chocolate for 15 seconds at a time until the chips are melted completely.

Now dip your bananas in the cup of melted chocolate scrapping off any extra excess chocolate. Place dipped chocolate back on the cookie sheet and quickly add your sprinkles. The chocolate hardens really fast!

Once each Popsicle is dipped and covered in chocolate and sprinkles place back in the freezer until they are frozen and you are ready to serve. Enjoy!
