I went to the LCBO last week and was so excited when I saw that they actually had cake vodka in stock. I've been wanting to try it for weeks, but every time I went in, they were sold out. So when I actually found it I think I was a bit too excited. I shared with the cashier what I was going to make with it and as I went to get the rest of the ingredients for this recipe I kept sharing what cocktail I was having that evening.
Since we've been having beautiful weather this past week and this weekend is our town's Annual Strawberry Festival, I thought this drink would be perfect for this week's Thirsty Thursday, Strawberry Shortcake Martini. YES! Seriously people, this drink is delicious. The best way to explain it is, it's literally a liquid form of what a strawberry shortcake taste like. You have to try it, it's "So Good!" (in my Sophia Grace voice, lol) I'll stop rambling and get to it.

Ingredients:
For the Strawberry Puree (enough for 5 martinis):
16 ounces frozen whole strawberries
1/2 cup water
1/2 cup sugar
2 tablespoons lemon juice
16 ounces frozen whole strawberries

For the Strawberry Shortcake Martini:
2 ounces cake flavored vodka
3 ounces of strawberry puree
fresh whipped cream and a strawberry, for garnish (optional)

Directions:
For the Strawberry Puree:Simmer for 10 minutes until sugar is dissolved and fruit is softened. Allow to cool and blend vigorously until smooth. If there are any pulp/seeds left, strain through a fine mesh strainer.
For the Strawberry Shortcake Martini:
Place ingredients in a cocktail shaker filled with ice and shake vigorously until chilled. Pour into a martini glass and top with (optional) dallop of fresh whipped cream, and garnish with a sliced strawberry.
