Enjoying Guacamole In The Fall! #Recipe


Fall is now here. I can't believe how fast the Summer came and gone. I loved all the barbecues and family get togethers we had and also all the yummy and delicious food that came with it. We seem to associate Summer with fresh fruit and veggies. I don't know about you, but I tend to buy more fresh fruit and veggies during the Summer more than I do any other time of the year.

When I think of Fall and Winter, my mind completely goes to baking and making stews, soups and casseroles. Even though I do purchase fresh veggies from my local grocery store to make these soups and casseroles, I forget that I can still enjoy fresh recipes like I do in the Summer, like, guacamole.

I love any and all Mexican food. It's mine and my husband's favorite type of food. So when I learned that Hellmann's had teamed up with celebrity Chef, Lynn Crawford, to create a couple different recipes using the popular mayo, guacamole being one of them, I knew I had to try it and share it with you all.

I've made guacamole lots of times, but have never thought to add mayo in it. It doesn't seem like it would be an ingredient to add, but let me just say, it was delicious. Not only was the guacamole a hit with my family, but it was rich and delicious and the mayo added a creaminess to the guacamole that, but didn't leave the guacamole mushy. The added fresh onions, cilantro, garlic and lime made worked so well with the mayo. My husband loved it so much, he wants me to start making this recipe for guacamole and suggested I make it this weekend when we have family and friends over and I think I will!

CHEF LYNN CRAWFORD’S GUACAMOLE DIP
Makes: 2 Cups
Prep Time: 10 Minutes

Ingredients
2 ripe avocados
2 tbsp lime, juiced
1/2 red onion, finely chopped
1 garlic clove, minced
1 bunch cilantro, finely chopped (remove stems)
4 tbsp. Hellmann’s® Real Mayonnaise
1/2 tsp. salt
1⁄2 tsp. freshly ground black pepper

Directions
1. Halve and pit the avocados. Scoop out the flesh of the avocados into a bowl. Gently mash the avocados with a fork, leaving them somewhat chunky.

2. Add the remaining ingredients, and fold everything together to gently mix.
