Easy After School Snacks w/ @SabraCanada (Review & Giveaway)


With three little ones, life is pretty busy around here. From the time I'm up with my two month old til the time all three are sleeping at night, it's non stop over here.

With the kids being back in school, not only am I trying to make a variety of lunches for them so they don't get bored with their food at school, but I'm also trying to make a variety of after school snacks for them that are not just delicious, but healthy as well.

A recent survey conducted by Nanos showed that 52% of respondents thought kids ate less healthy today than they did when they were young, and many still stress about school lunches. I know for me, thinking of many different snacks and lunches can some times get overwhelming, so I try and plan ahead of time what I'll be making the kids for lunch and after school snack at the beginning of the week, so I don't have to stress about it during the week.

The last couple of weeks I've been making snacks with delicious hummus from Sabra Canada. We've reviewed their hummus before and my thoughts on it hasn't changed. I love that it not only tastes delicious, but their hummus is made with ingredients that you can understand. Not only that, but their hummus is gluten free as well. I love that we can dip hummus with veggies, but we also love dipping pita bread with it as well.

My kids loved coming home after school to a platter of Cucumber Cups, a recipe I got from Sabra Canada. Not only are these cups delicious and healthy, but they are incredibly easy to make and something the kids can help you make as well.




Cucumber Cups
Ingredients:
1 container Sabra hummus
2 English cucumbers
1 tsp. paprika
1 bunch parsley, finely chopped

Directions:
Peel the cucumbers and slice length wise into 1¼ inch pieces.
Using a melon baller, carve out the seeds to create a vessel, making sure to leave the bottom intact.
Using a piping bag or a small spoon, fill each one with hummus (about 1 tsp. each).
Sprinkle with paprika and finely chopped parsley.
