With the holidays around the corner, the next couple of months will be pretty busy, especially in my kitchen. Not only will I be baking goods for our family holiday parties, but also for the kid's teachers and classmates at school.

Oreo Mini Chocolate Cheesecake
Serves 12
Ingredients
2 pkg. Philadelphia Chocolate Cream Cheese, softened
1/4 cup Truvia Baking Blend
2 eggs
2 eggs
12 Oreo Cookies
Pre-heat oven to 350°F.
Beat cream cheese and sugar in large bowl with mixer until blended. Add eggs, 1 at a time, beating on low until blended.
Place 1 cookie on bottom of each of 12 paper-lined muffin cups; cover with batter.
Bake 20 min. or until centres are almost set. Cool. Refrigerate 3 hours.
