Hidden Valley Ranch Recipe Challenge

I had the opportunity to participate in the Hidden Valley Ranch Recipe Challenge. Our goal, to come up with a recipe using one of the six bottles of Hidden Valley Ranch. Below is the recipe I chose from Hidden Valley's website and I've also included some images of how the outcome was including what I thought of the recipe.



Cold Tortellini Chicken Salad

Ingredients:
¾ cup Hidden Valley Original Ranch Dressing
1 cup broccoli florets
1 package (10 ounce) cheese tortellini
1 small red onion, peeled and diced
1½ cups diced, cooked chicken*, turkey or ham
3 tablespoons minced parsley
5 medium tomatoes, stems and seeds removed and diced
or, Hidden Valley Original Ranch Light Old-Fashioned Buttermilk Dressing
1/3 cup shredded Parmesan or Swiss cheese

Directions:
Cook pasta according to package directions. Drain, rinse and let cool.
In a large bowl, add the tomatoes, chicken, broccoli, onion,cheese, and dressing and toss with enough of the dressing to coat evenly. Serve garnished with parsley.


My thoughts:
I actually enjoyed this meal. I served it with garlic bread and my kids just ate it up. We're not really use to eating tortellini, so the texture of the pasta was something we had to get use to, but other then that I thought the meal turned out delicious. It got eaten up pretty quick, with no left overs. It was very easy to make and didn't take long at all. We used chicken instead of ham or turkey, but I'm sure either of the three would be great in this recipe.
