I don't know about you, but Spring means warmer weather, flowers starting to bloom, BBQ grills starting to fire up, family gatherings, kids bringing out their bikes, scooters and skateboards and lots and lots of delicious foods and outdoor time.
Although the weather has been up and down out here in Canada for Spring, a couple weeks back was pretty amazing as was yesterday. The kids got to play outside with no boots on, no winter coats and the hubby and I decided to start our grill, make a few dishes and eat outside on the patio for dinner. So corn on a cob, grilled chicken and potato salad was for dinner. It was delicious and just what we needed!
I'm not huge on mayo, but I do enjoy a good potato salad and it's hard to get me to eat just anyone's potato salad. I'm a huge fan of my dad's, but since he's all the way in California I had to call him up for his recipe and make mine. It turned out great!
Although potato salad isn't always the healthiest side dish out there, I wanted to share with you ways that you can make this barbecue favorite side dish light and healthy for your family to enjoy.
