Below is the recipe from Plain Chicken and also with the ingrediants I added, which is totally optional. We also had this with a salad which worked out great together!
Recipe from Plain Chicken
4 Tbsp butter, softened (or buttery spread like SmartBalance)
garlic powder
1 loaf French bread, split in half lengthwise
2 cups Monterey Jack cheese, shredded
3/4 cups ranch dressing

Spread butter on bread and sprinkle with garlic powder (to taste). Place bread under the broiler until it’s slightly brown and crispy.
Combine cheese and ranch dressing and divide evenly over bread. Place in a 350 degree oven until cheese is melted, about 10-12 minutes (longer if you want the bread crispier). Let sit a few minutes before slicing
The following is what I did before placing the bread in the oven. This is optional.
What I added (Optional)
2 boneless skinless chicken breast
1 tomatoe
4 green onions

Season and cook chicken thoroughly, wait until cool and then cut into small chunks. Dice up tomatoe and cut up green onions. After you add the ranch and cheese spread to the bread then top with chicken, diced tomatoes and green onions.
Place in a 350 degree oven until cheese is melted, about 10-12 minutes (longer if you want the bread crispier). Let sit a few minutes before slicing.
