Easy Chocolate Chip Cookies

The holidays make me smile. One of the things that I love best around this time of year is baking. Over the last couple of years I have been making these easy chocolate chip cookies for my family and friends and thought I'd share them with you all as well.






 If you've never made cookies before or if you have but want an easier way to make them, then this recipe is definitely for you. I found this recipe via the web a few years back and ever since have been taking these to the Cookie Exchange parties I attend. The best part about these delicious, mouth watering goods is that they stay fresh and chewy longer then ANY other recipe I’ve used while baking cookies. I think that’s why I keep going back and making them, besides the fact that they taste yummy in my tummy."How does that work?" you ask, simple. I used cake mix to make them. Yep, I said it, cake mix. 


Not only have I tried using this recipe with chocolate cake mix, I’ve tried lemon cake mix, yellow cake mix, they all come out chewy and tasting so good.  I’d advise you to try the chocolate cake mix out first, see how you like it (I don’t think you’ll be disappointed) and then try other flavors. Here is the recipe below, hope you enjoy!



Easy Chocolate Cookies Recipe
  • 1 package of Dark Chocolate Cake mix
  • 1/2 cup melted butter (1 stick)
  • 1/2 cup firmly packed brown sugar
  • 2 eggs
  • 1 tablespoon cream cheese 
  • 1 teaspoon vanilla
  • 1 1/2 cup semi-sweet chocolate chips
  • 1/2 cup nuts (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Directions

  1. Mix cake mix, butter and sugar together.
  2. Add eggs, one at a time, mixing between each egg.
  3. Add vanilla and cream cheese, mix well.
  4. Stir in chocolate chips, nuts and dried cranberries or raisins.
  5. Bake at 350° for 8-10 minutes.
